Chocolate and Mascarpone Cheesecake Recipe

This dark chocolate and mascarpone cheesecake won’t be the lightest of cakes, but we only live once, right? Besides, the cold season is coming up and you know that with cold we burn more calories, so… anyway, it is not so bad as you think, as the recipe also contains yogurt, with definitely less calories than mascarpone. If you think it could still be too heavy, you can lower the quantity of mascarpone in favor of more yogurt or ricotta cheese.

Ok, without further ado, here are the ingredients for 4-6 people:

150gr (5 oz) rich tea biscuits
60gr (2 oz) butter, melted, plus extra for greasing
500gr (1.1 lb) mascarpone
250gr (9 oz) natural yogurt
200gr (7 oz) sugar
4 eggs, yolks and whites separated
100gr (3½ oz) dark chocolate
1 tsp vanilla extract
60gr (2 oz) dark chocolate flakes
1 pinch of salt
Flour for dusting

Preheat the oven at 180°C (356°F).
Grease the bottom of a circular cake tin with butter and dust it with flour.
Crumble the biscuits and mix them with the butter, then pour the mix in the cake tin and press it and level it with a spatula.
Put the chocolate in a pan and melt on a low heat, then take off the stove and let cool.
In a bowl, whip the egg whites until firm. In a second bowl, with an electric whip, work together: mascarpone, yogurt, sugar, vanilla extract and egg yolks. Once it’s all mixed, add the chocolate and the egg whites.
Pour the mix on the cheesecake base and finish with a layer of chocolate flakes. Bake for one hour, then let it cool to room temperature and keep it in the fridge for two hours before serving.
